With the Chocolate Decadence event coming up tomorrow (Friday, Jan. 29), we thought we’d get you excited with a recipe from our executive pastry chef, Jean-Marie Verhoeven, who will have plenty of chocolate for you to try out here tomorrow. More information on that event is available here.
Chocolate Tart (by Pechanga Executive Pastry Chef, Jean-Marie Verhoeven)
Chocolate Tart Dough Ingredients:
525 g butter 300 g powdered sugar 3 ea eggs 750 g all purpose flour 60 g cocoa powder
With a paddle attachment, mix together butter and powdered sugar until it looks like sand. Add eggs and mix until thoroughly combine. Add cocoa powder and all purpose flour until just blended. Chill for one hour. Roll the dough out onto a floured board to 1/8“ and cut into desired shape. Press dough into mold, then line with oven-proof paper. Add pastry weights or just use dry pinto beans. Bake 10 minutes at 325° F, remove beans and bake another five minutes.
Chocolate Cake Ingredients:
3 ea egg whites 1 oz granulated sugar 1 ea egg yolk 3 oz dark chocolate, melted 1 ½ oz butter, melted with chocolate
Whip the egg whites to soft peaks then add sugar. Remove from mixer and fold in the egg yolk. Slowly fold in melted chocolate and butter. Pipe into same size as tart shell. Bake at 350° F for 10 to 12 minutes. Let cool.
5 oz cream 1 oz glucose or corn syrup 3 ½ oz dark chocolate 1 ½ oz butter soft
Bring cream and glucose to a boil. Pour hot cream over chocolate and mix well. Add butter and mix well.
Take a tart shell and put a chocolate disc on the bottom. May soak with Grand Marnier or desired liquor. Pour some of the ganache even with top of shell. Let set. Serve with some fresh raspberries or a scoop of vanilla ice cream.
What a great concert from Harry Connick Jr. on Sunday. He delayed his show a little to watch the end of the New Orleans Saints game and came out more excited than anyone has ever seen him when they won. Great review, worth the read.
Congratulations to Richard Hernandez, our Facebook fan who won our ‘Going Green’ contest. We asked everyone to tell us how they have been going green lately in their daily life. We received so many great entries and we’re proud to have such inspiring members in the Pechanga community.
Richard’s post was one of the standout entries:
"While I was at my job with some down time, I counted all the light bulbs in the restaurant i worked at. It turned out to be between 125-175 bulbs. After researching the energy used by regular bulbs compared to CFLs (looked it up on my phone when no customers were around) & doing some math on the back of a napkin (recycle napkin),I figured out that they could reduce their bills & energy consumption by replacing their bulbs with newer energy efficient ones. (regular bulbs lasting about 1000 hrs, CFLs lasting between 6,000-10,000 hrs-less bulb replacing). in addition, the heat put out by a CFL is considerably less-the restaurant would be cooler & require less use of the AC (air was always on thanks to the warm winter we WERE having)"
Richard’s ambition reminded us a lot of how we operate here at Pechanga and how important it is to take the time to really care about how your company operates, regardless of how big or small it may be.
It’s inspiring to us (and hopefully to you as well) that every one can really make a difference when “going green.” Regardless of where you work, what you do or what your position is, every idea and effort helps.
So as you finish off the week at work, start thinking about what you can to do help. Start small and inspire others around you.

The contest asked fans & followers to predict the first jackpot that would hit this morning. Our guest Ying hit a $14,620 jackpot to kick off today and helped Daryl & Jedediah take home their prizes (a hotel package and couple’s massage, respectively).

If you were here for last year’s first Pechanga Wine Festival, then you already know what a great event this is. The best news is: We only made it better.
This year we’ll have 63 wine booths of the most notable wineries from Temecula Valley and beyond. You can sip and savor the local flavors as you sample a variety of distinguished dishes from the award-winning Chefs of Pechanga Resort & Casino.
There will also be 25 booths set up for our Chocolate Decadence event, which will be hosted the night before this year.
