Chef's Choice Recipe: Green Bean and Shrimp salad w/ raspberry vinaigrette
Green Bean and Shrimp salad with raspberry vinaigrette by Kevin Hendrickson (Seafood Grotto)
1lb. or 16 to 20 large shrimp cleaned and deveined, cooked 2lbs. green beans, blanched 1 bunch mint 8 oz. Blanched slivered almonds
For the vinaigrette: 2 pints fresh raspberries 1 shallot, minced 1 oz. sherry vinegar ½ Tbsp. of honey 8 oz. extra virgin olive oil Kosher salt Fresh cracked white pepper
To make the vinaigrette: In a mixing bowl incorporate raspberries, shallots, vinegar and honey. Using a hand blender emulsify the ingredients together drizzling the olive oil until you have a nice creamy consistency. In another mixing bowl combine the shrimp, beans, and toss with the vinaigrette season to taste. Put the salad in to a serving bowl and garnish with the reserved raspberries, slivered almonds, and fresh mint leaves.

Never did we predict that someone would come within a mere $5,000 of our actual Saturday payout. But Pamela, or @scullypoodle, proved us wrong.
Saturday’s total payout in jackpots above $1,200 was $1,581,204 (not bad for one night, right?). Pamela’s prediction was $1,586,346 and to say we’re impressed would be an understatement. As she said, “I’m so excited! I won AND I won impressively, wow!”

I have always wondered why Pechanga doesnt have a regular Roulette wheel?
Buddy: Great question. The California constitution prohibits the use of roulette wheels. We recently added “Mystery Card Roulette” (a card game). It has a round “card shuffler,” which is a horizontal wheel (like roulette), but with slots for 38 different cards. A flapper, like on Wheel of Fortune, comes down once betting is complete. When the wheel stops; we pull out and display the card chosen. The cards are red and black (numbered from 1 to 36) with two green cards (0 & 00). The odds and betting are like any regular roulette. We also have electronic video roulette games with the same odds. I would choose the video if you want to bet lower and like a faster game. The Mystery Card versions give you a more traditional game using real chips; a live dealer and a roulette wheel “feel.” Either version is a great way to enjoy the classic game.
Where do the machines go when you remove them?
Pechanga, by regulation, can only sell to licensed vendors. However, you can buy slot machines here in California for private use. They must be at least 25 years old. You can find several vendors on line. My favorites for home ownership are the mechanical machines popular from 1930 to 1960. They will work for years and years and never break. Our new, more modern machines require lots of attention by our Techs on a daily and weekly basis.
Question: I just came from Vegas and I was really amazed with the new IGT machines available now. How often does Pechanga change their selections of slots to have them available just like in Vegas?
Buddy: We generally get their machines first when they are introduced in California. The next new one is Sex in the City coming next month. We generally change about 20% of our slots each year and keep the favorites in place.
What’s the largest amount of money won at Pechanga on the slots?
We had a $3,515,070 win on a Wheel of Fortune 5¢ machine in February. Other big winners were $1,215,898 and $1,570,681 also on the Wheel. There was a $1,061,225 on our Indiana Jones 1¢ machine on Oct 9, 2009.
